  • 1 ½ pounds boneless pork, cut into 1 inch cubes

  • 1 tablespoon vegetable oil

  • 1 tablespoon all-purpose flour

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • ½ teaspoon garlic powder

  • salt and black pepper to taste

  • 3 cups water

Direction
  1. Place 3 tablespoons flour in a plastic bag. Add pork and shake to lightly coat with flour; set aside.

  2. Heat bacon drippings and vegetable oil in a Dutch oven over medium-high heat. Add pork and cook until meat is evenly browned, about 5 to 8 minutes.

  3. Stir in 1 tablespoon flour; cook and stir for 3 minutes. Stir in onion, tomato sauce, chili powder, cumin, garlic powder, salt, pepper, and water. Bring to a boil; reduce heat to medium-low and simmer until pork is just falling apart, about 1 1/2 to 2 hours.
