Jicama Salad with Mango and Lime

Ingreadient

Salad:

  • 1 large jicama, peeled and cut into matchsticks

  • 1 small red bell pepper, cut into matchsticks

  • 1 large firm mango, peeled and cut into matchsticks

  • ½ medium red onion, thinly sliced

Dressing:

  • ½ cup chopped cilantro leaves

  • ¼ cup honey

  • 2 medium limes, juiced

  • 1 teaspoon salt

  • ⅛ teaspoon cayenne pepper, or more to taste

Direction
  1. Gather all ingredients.

  2. To make the salad: Toss jicama, bell pepper, mango, and red onion together in a large bowl.

  3. To make the dressing: Stir cilantro, honey, lime juice, salt, and cayenne pepper together in a small bowl.

  4. Pour dressing over salad and toss to coat. Cover and refrigerate for at least 15 minutes before serving.
